SNACK ATTACK
I was about to bake my lunch. And up it creeped, a snack craving. It would take 50 minutes for my Arroz Con Pollo to bake. It's chicken, with rice, black beans, green beans, salsa, tomatoes and topped with cheddar.
For my snack I made a chickpea salad:
1/2 cup of chickpeas
raw yellow peppers, tomatoes, and cucumbers
1.5 tbsp of light cheddar ranch
1 glass of crystal light raspberry peach (1 pitcher made from 1 water bottle single)
I find the regular pitcher size of crystal light too strong, I've been making the water bottle size in a 2ltr pitcher for a while now. Next week when I'm in Phoenix I need to stock up on the grape and lemon natural flavor crystal light with stevia instead of splenda. Stevia is legal in Canada now but it can not be incorporated into retail products yet according to the Canadian food and drug policies.
